Any Interesting Recipes for Butter Beans?


At last our back yard garden produced a better-late-than-never crop of butter beans. While I use them in Brunswick stew and my hubby eats them plain or with corn, that's about it.


What else can one do with butter beans that's good?

you can cook them in a rice dish, it is not uncommon to use beans/legumes in paella dishes. They are not the star of the dish but add flavor and texture.

Butter beans with carmelized onions and bacon. I served this as a Thanksgiving side dish one year.

Have you thought about making a classic succotash with butter beans, corn and tomatoes? You can make a double recipe and freeze half of it. I made this recipe from Bon Appetite this year. I am going to fry some up with sunchokes and the last of the cherry tomatoes. I also used some in a soup with potatoes and kale. Mmmmm...

I like making a butter bean puree in place of mashed potatoes alongside of a main course. I wing it and don't have a standard recipe, but do something similar to what you'll find here:
